Producer: Domaine Jérôme Chézeaux is based in Premeaux-Prissey and has been family-owned for several generations. Jérôme Chézeaux assumed responsibility for the estate in 1993, and in recent years his daughter Lyse Chézeaux has taken on an increasingly prominent role in both the vineyards and cellar. The domaine farms approximately 11 hectares across an outstanding range of appellations that includes village and Premier Cru vineyards in Nuits-Saint-Georges and Vosne-Romanée, as well as holdings in Clos de Vougeot Grand Cru. Viticulture focuses on sustainable farming, low yields, and meticulous hand harvesting, while the cellar philosophy remains deliberately traditional. All red wines are fully destemmed before fermentation with indigenous yeasts, followed by restrained élevage in French oak that supports rather than dominates the wines. The style emphasizes purity, balance, and transparency over extraction or heavy oak influence. Although still something of an insider's domaine, Chézeaux has steadily gained recognition for producing wines that consistently overdeliver for their appellation, with recent vintages earning particularly strong praise from critics.
Vineyard: Les Vaucrains is one of the most revered Premier Crus of Nuits-Saint-Georges and has long been considered among the appellation's finest vineyards, often mentioned alongside Les Saint-Georges as a candidate worthy of Grand Cru status. Situated directly above Les Saint-Georges on the mid-slope of the Côte de Nuits, the vineyard benefits from shallow clay-limestone soils over fractured limestone bedrock. The site consistently produces wines of remarkable concentration, firm structure, and mineral depth. Compared with Les Saint-Georges, Les Vaucrains is generally regarded as the more muscular and brooding of the two climats, combining dark fruit with pronounced tannic architecture and exceptional longevity. Mature vines and naturally low yields contribute further concentration while preserving freshness and precision. The 2024 vintage's tiny crop naturally intensified the vineyard's depth without sacrificing classical balance.
Winemaking: Fruit is harvested entirely by hand before rigorous sorting and complete destemming. Fermentation proceeds with indigenous yeasts in open fermenters, followed by careful extraction designed to preserve aromatic purity while building the structure expected from Les Vaucrains. The wine matures for approximately 15 to 18 months in French oak barrels, typically with 20–30% new oak, allowing the vineyard's mineral character to remain the defining feature. Bottling occurs after sufficient élevage to integrate fruit, tannin, and oak without filtration that would diminish texture or complexity. The resulting wine is built for extended cellaring, reflecting both the power of the site and the domaine's restrained approach to élevage.
Food Pairing: Pair with roasted venison, beef Wellington, braised short ribs, rack of lamb, duck breast with cherry reduction, wild boar, mushroom risotto, or aged Comté. The wine's powerful tannic structure and mineral backbone also make it an excellent companion to black truffle dishes, game birds, and richly braised meats.
