- Producer: Domaine Daniel-Étienne Defaix is one of Chablis’s most traditional estates, with the Defaix family tracing its winegrowing history in the region to 1610. Daniel-Étienne represents the 14th generation and took control of the domaine from his father in 1978. Today the estate encompasses just over 28 hectares, concentrated largely around Milly on the left bank of the Serein, with important Premier Cru holdings including Vaillon, Les Lys, and Côte de Léchet. Defaix is particularly distinctive for the way he matures his wines: rather than relying on oak, the Premier and Grand Crus spend exceptionally long periods on their lees in stainless-steel tanks, often remaining at the domaine for close to a decade before release. Indigenous yeasts, slow fermentations, prolonged lees contact, and patience in the cellar are fundamental to the style. The result is the unusual opportunity to buy mature Chablis directly from the domaine, with the freshness and mineral character of the appellation preserved through extended aging.
- Vineyard: Defaix deliberately labels this wine “Vaillon” rather than “Vaillons.” The distinction refers to the family’s parcel within the original boundaries of the cru, before the Vaillons designation was expanded in 1976. The domaine works an old-vine parcel of approximately 45-year-old Chardonnay on a steep 28-degree, southeast-facing slope. The site is notable for its iron-rich soils, alongside the Kimmeridgian clay-limestone and marl geology characteristic of Chablis. The exposure gives the vineyard ample sunlight, helping explain why Vaillon tends to be one of the broader, richer and more powerful Premier Crus in Defaix’s range while maintaining the acidity and mineral backbone associated with the site. 2015 was a warm, ripe vintage in Chablis, and that character is particularly well suited to Vaillon: the wine has generous orchard and citrus fruit, substantial texture and concentration, but after its long maturation it continues to show excellent freshness, energy and distinctly Chablisien mineral character.
- Winemaking: This is where Defaix is truly different. The 100% Chardonnay is fermented with naturally occurring indigenous yeasts, with fermentations typically lasting approximately three to six weeks. The wine sees no oak and remains in stainless-steel tank on its lees for an exceptionally long period before release. Defaix employs bâtonnage during the early portion of élevage, a practice inherited from his grandfather, while allowing the wines to develop gradually in the cool cellar. Malolactic fermentation occurs naturally and can itself proceed very slowly. For the cru wines, total tank maturation can reach eight to ten years or longer, allowing prolonged yeast autolysis to build texture and complexity while the closed stainless-steel environment helps retain freshness. The extended settling also means Defaix can avoid aggressive clarification; the wines are ultimately bottled without the routine fining or filtration commonly required after shorter élevage. This highly unusual approach explains why a 2015 Premier Cru is being offered with substantial maturity already built into the wine, rather than requiring the buyer to cellar a newly released bottle for years.

With a decade of development, the 2015 has more breadth and complexity than a young Chablis while retaining the acidity and mineral character to work beautifully with seafood. Its mature texture also makes it particularly well suited to richer fish, poultry, mushrooms, and cream-based preparations.
