Producer: Domaine Nathalie & Gilles Fèvre is a family-owned estate based in Fontenay-près-Chablis, with the Fèvre family cultivating vineyards in the region since 1745. In 2003, Gilles and Nathalie left the local cooperative to begin bottling under their own label, allowing them to showcase the exceptional vineyard holdings planted by previous generations. Today, the estate farms approximately 50 hectares, including village Chablis, Premier Cru, and Grand Cru vineyards. Nathalie, an accomplished oenologist, oversees the cellar while Gilles manages the vineyards, continuing a philosophy centered on meticulous viticulture, sustainable farming, and allowing each site to express its unique character.
Vineyard: The domaine's Chablis is sourced from estate-owned parcels surrounding the village of Fontenay-près-Chablis, just northeast of the Grand Cru slope. These vineyards are planted on classic Kimmeridgian limestone, a fossil-rich combination of limestone, clay, and ancient marine sediments that defines the world's finest Chablis. Vines range from approximately 15 to more than 60 years of age, with several parcels originally planted by Gilles' grandfather during the 1950s and 1960s. This remarkable terroir consistently produces Chardonnay of exceptional freshness, chalky minerality, and vibrant acidity, hallmarks that have made Chablis one of Burgundy's most distinctive appellations.
Winemaking: Grapes are harvested at optimal ripeness before gentle pressing and fermentation in temperature-controlled stainless steel tanks. The wine remains on its fine lees for approximately ten months, adding texture and complexity while preserving the purity and precision that define classic Chablis. Domaine Nathalie & Gilles Fèvre deliberately avoids unnecessary oak influence, allowing the mineral expression of the Kimmeridgian soils to remain at the forefront. The result is a Chardonnay that balances crisp citrus fruit, orchard fruit, and saline minerality with remarkable freshness, making it both immediately enjoyable and capable of developing additional complexity over several years in bottle.
