- Producer: Domaine Noël Ramonet & Fils was established in 2023, marking the beginning of a new chapter for the Ramonet family. After decades overseeing the family's vineyards while his brother Jean-Claude managed the winemaking, Noël Ramonet partnered with the fourth generation—his sons Michael and Pierre-François Ramonet—to create a separate domaine centered on some of the family's most prestigious vineyard holdings. The new estate comprises approximately 2.2 hectares acquired from the family's original 9-hectare holding, with a philosophy rooted in sustainable viticulture, meticulous handwork, and traditional Burgundian élevage that continues the Ramonet family's long-established style.
- Vineyard: Les Ruchottes is widely regarded as one of the finest Premier Cru vineyards in Chassagne-Montrachet, situated on the upper slope of the appellation where shallow limestone-rich soils and excellent drainage consistently produce wines of precision and longevity. The vineyard's stony soils and easterly exposure encourage slow, even ripening while preserving freshness and mineral definition. The 2023 vintage benefited from a warm growing season and an abundant crop of healthy fruit, with harvest beginning in late August under excellent conditions. Careful vineyard management allowed producers to retain freshness and balance while achieving excellent physiological ripeness.
- Winemaking: Grapes are harvested entirely by hand before being gently whole-cluster pressed. Fermentation takes place in French oak barrels using traditional Burgundian methods, followed by complete malolactic fermentation and extended aging on the fine lees. The wine is matured in French oak for approximately 12 to 18 months, depending on the vintage, with a measured proportion of new oak chosen to complement rather than dominate the vineyard's character. The emphasis remains on purity, texture, and allowing the limestone-driven terroir of Les Ruchottes to take center stage.

The wine's combination of ripe orchard fruit, vibrant acidity, subtle oak integration, and pronounced limestone minerality makes it an excellent match for refined seafood, creamy poultry dishes, and aged Alpine cheeses, while its structure and balance provide the potential for graceful cellaring over the next decade or more.
