- Producer: Domaine Jean-Claude Ramonet is one of the benchmark estates of Chassagne-Montrachet, founded by Pierre Ramonet in the late 1920s and developed parcel by parcel into one of the Côte de Beaune’s most important collections of vineyards. The domaine today encompasses approximately 17 hectares across 24 appellations, with production roughly 70% Chardonnay and 30% Pinot Noir. Holdings extend through Chassagne-Montrachet, Puligny-Montrachet, Saint-Aubin, Bouzeron and Pernand-Vergelesses and include Grand Crus such as Montrachet, Chevalier-Montrachet, Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet, together with an extensive group of Chassagne Premier Crus. The vineyards are traditionally farmed without chemical fertilizers, and harvesting is carried out manually. Ramonet’s whites are particularly associated with a combination of concentration, freshness and longevity, with élevage used to support rather than obscure the differences among individual climats.
- Vineyard: Les Vergers is a Premier Cru climat on the northern side of Chassagne-Montrachet, toward the Puligny-Montrachet boundary, within the important band of white-wine vineyards that includes Les Chenevottes, Clos Saint-Jean and Les Caillerets. Like much of this upper and mid-slope sector of Chassagne, the terroir is based on limestone-rich, stony soils with varying proportions of clay and marl, providing the drainage and mineral foundation particularly well suited to Chardonnay. Chassagne-Montrachet’s vineyards generally occupy elevations between approximately 220 and 325 meters, with the Premier Cru slopes benefiting from good exposure and naturally well-drained limestone geology. The 2022 vintage was warm and dry, producing fully ripe, healthy Chardonnay while the strongest sites retained excellent freshness and balance. That combination was particularly successful in Chassagne: the wines have generous fruit and concentration without sacrificing the acidity and mineral definition necessary for aging. In Les Vergers, the result is a 2022 with the breadth expected from ripe Chardonnay alongside the tension and structure of a limestone-dominated Premier Cru.
- Winemaking: The 2022 Les Vergers is produced from 100% Chardonnay and follows Ramonet’s traditional approach to white Burgundy. Grapes are harvested by hand and gently pressed, with fermentation taking place in French oak barrels, followed by malolactic fermentation and extended maturation on the fine lees. Ramonet traditionally uses a measured proportion of new oak rather than allowing barrel character to dominate the wine, with the élevage intended to build texture while preserving acidity and vineyard expression. The domaine’s whites are generally matured for approximately 12–15 months before bottling. For Les Vergers specifically, I could not verify a domaine-issued 2022 technical sheet establishing an exact new-oak percentage, so I would not repeat the approximately one-third figure we used for Les Ruchottes as though it automatically applies here. The finished 2022 is 13.5% ABV, consistent with the ripe but balanced character of the vintage.

- Food Pairing: Butter-poached lobster, roasted lobster, Dover sole, turbot, halibut, seared scallops, monkfish, roast chicken with morels, chicken in cream sauce, veal sweetbreads, veal medallions, lobster risotto, Comté, Beaufort, and Gruyère. The combination of concentrated Chardonnay fruit, fresh acidity, limestone-driven structure and barrel-derived texture makes Les Vergers particularly well suited to richer seafood and poultry, especially preparations incorporating butter, cream or mushrooms. Roasted lobster is a particularly natural match; one specialist source recommends it specifically with the 2022.
