- Producer: Domaine Jean-Claude Ramonet is one of the longest-established family estates in Chassagne-Montrachet. Founded by Pierre Ramonet in the late 1920s, the domaine is now managed by brothers Noël and Jean-Claude Ramonet, representing the third generation. The estate farms approximately 17 hectares across Chassagne-Montrachet, Puligny-Montrachet, Saint-Aubin, Pernand-Vergelesses, and Bouzeron. Vineyard management centers on sustainable farming, regular soil cultivation, and controlled yields to preserve the individuality of each climat. The domaine harvests by hand and continues to follow traditional Burgundian vinification, with élevage in French oak barrels for 12 to 18 months depending on the appellation. Ramonet is particularly recognized for producing Chardonnay that emphasizes precision, balance, and longevity rather than excessive ripeness or oak influence.
- Vineyard: Les Vergers is a Premier Cru climat situated on the northern side of Chassagne-Montrachet, just below Les Chaumées and adjacent to Les Chenevottes. The vineyard is planted on shallow limestone and clay soils with excellent natural drainage and an east-facing exposure that promotes slow, even ripening. Compared with some of Chassagne's richer lower-slope vineyards, Les Vergers often produces wines with greater mineral definition, linearity, and freshness while maintaining the concentration expected from Premier Cru Chardonnay. Its location on the mid-slope provides an ideal balance of sunlight, drainage, and limestone influence, contributing to wines capable of long bottle aging while remaining approachable with time in the glass.
- Winemaking: Produced from 100% Chardonnay, the grapes are harvested entirely by hand and pressed immediately after picking. Fermentation is carried out with indigenous yeasts in French oak barrels, followed by 12 to 18 months of élevage depending on the vintage. The proportion of new oak is intentionally restrained, allowing the vineyard character to remain the primary focus. Full malolactic fermentation occurs naturally, and the wine remains on its fine lees throughout maturation to develop texture and complexity. Bottling takes place after sufficient integration of fruit, acidity, and oak, with minimal intervention to preserve the expression of both the vintage and the vineyard.
- Food Pairing: Pair with lobster, Dover sole, turbot, scallops, roast chicken with morels, veal in cream sauce, crab, or aged Comté. The wine's combination of mineral structure, bright acidity, and layered texture also complements shellfish, grilled white fish, and classic Burgundian cream-based dishes.
