Producer: Domaine Jean-Claude Ramonet is one of the benchmark estates of Chassagne-Montrachet and among the most revered white wine producers in Burgundy. Founded in the 1930s, the domaine remains family-owned and farms approximately 17 hectares across Chassagne-Montrachet, Puligny-Montrachet, and Saint-Aubin. Ramonet's meticulous vineyard work, early harvesting philosophy, and restrained use of oak have made the estate a reference point for traditional white Burgundy.
Vineyard: Les Ruchottes is one of Chassagne-Montrachet's highest and most limestone-rich Premier Cru sites, located on the upper slope directly above Morgeot. The vineyard's shallow soils and elevated position consistently produce wines with greater tension, minerality, and precision than many richer Chassagne premier crus. The site is particularly prized for its ability to combine power with freshness and long-term aging potential.
Winemaking: Produced from 100% Chardonnay harvested by hand. Ramonet ferments with indigenous yeasts and ages the wine in French oak barrels for approximately 12-18 months, typically utilizing a modest percentage of new oak relative to many neighboring producers. Full malolactic fermentation is employed, but the emphasis remains on preserving vineyard character and freshness rather than oak influence.
Food Pairing: Lobster with beurre blanc, Dover sole, turbot, roast chicken with morels, veal in cream sauce, scallops, crab, and aged Comté. The wine's mineral backbone and concentration make it particularly effective with richer seafood and poultry preparations.
