- Producer: Domaine Borgeot was founded in 1903 and is based in the village of Remigny, just south of Chassagne-Montrachet. Today the estate is managed by brothers Pascal and Laurent Borgeot, the fourth generation of the family, who farm approximately 24 hectares across Bouzeron, Santenay, Chassagne-Montrachet, and Puligny-Montrachet. Vineyard work is carried out using sustainable farming practices, with an emphasis on low yields, careful canopy management, and hand harvesting. The domaine vinifies each parcel separately, allowing the individual characteristics of each climat to be preserved. Village wines are typically matured with 20–25% new French oak, while Premier Crus receive a slightly higher proportion, reflecting the estate's measured approach to élevage.
- Vineyard: Les Grands Champs is a village-level climat located in the southern portion of Puligny-Montrachet, near the border with Meursault. The climat covers approximately 3.65 hectares and is planted on the classic clay-limestone soils that define the appellation. Its position within Puligny allows for excellent drainage and consistent ripening, while the limestone-rich subsoil contributes to the appellation's hallmark mineral character. Puligny-Montrachet is situated between Meursault and Chassagne-Montrachet and is planted almost exclusively to Chardonnay. Although Les Grands Champs is a village vineyard rather than a Premier Cru, its proximity to several highly regarded sites has made it one of the better-known lieux-dits within the appellation.
- Winemaking: Produced from 100% Chardonnay, the grapes are harvested entirely by hand before gentle pressing and fermentation in a combination of French oak barrels and temperature-controlled tanks. The wine is aged for approximately 11 months in French oak, with 25% new barrels, a regimen that provides structure and texture without dominating the fruit. The remaining barrels are older oak, allowing the vineyard character and natural acidity to remain the focus. After élevage, the wine is assembled and bottled following sufficient maturation to integrate the oak while preserving freshness and varietal definition. The domaine's approach favors balance, moderate extraction, and site expression over heavy wood influence.
- Food Pairing: Pair with lobster, Dover sole, turbot, halibut, scallops, roast chicken, veal in cream sauce, or aged Comté. The wine's combination of citrus fruit, mineral structure, and moderate oak also complements shellfish, grilled white fish, mushroom dishes, and classic Burgundian cuisine.
