The domaine farms approximately 17 hectares across 24 appellations, with roughly 70% Chardonnay and 30% Pinot Noir, spanning many of the Côte de Beaune's most prestigious vineyards. While Ramonet is celebrated worldwide for its white wines, the estate has long been regarded as one of Chassagne-Montrachet's finest producers of Pinot Noir, applying the same meticulous vineyard work, low yields, and restrained cellar practices to its red wines.
- Vineyard: Boudriotte is a Premier Cru climat situated within the southern sector of Chassagne-Montrachet, adjacent to the renowned Morgeot vineyards. Domaine Ramonet bottles this wine separately from its Clos de la Boudriotte, as the two originate from different parcels despite sharing the same Premier Cru climat. The vineyard is planted on gravelly, iron-rich marl over limestone, soils that consistently produce Pinot Noir with both structure and mineral definition. The 2022 vintage was characterized by a warm, dry growing season with healthy fruit and excellent ripening conditions throughout the Côte de Beaune. Careful vineyard management and hand harvesting allowed producers such as Ramonet to craft wines that combine ripe fruit, freshness, and outstanding balance.
- Winemaking: Grapes are harvested entirely by hand and carefully sorted before traditional Burgundian fermentation with gentle extraction to preserve aromatic purity and fine tannins. The wine is matured for approximately 12 to 15 months on its lees in French oak barrels, with approximately one-third new oak, providing additional texture and complexity while allowing the vineyard character to remain the focus. Ramonet's restrained approach to élevage emphasizes balance, finesse, and transparency rather than overt oak influence.
