- Producer: Domaine Buisson-Battault is a fifth-generation family estate based in Meursault, today directed by François Buisson. François began working alongside his father André in 1985, took over management of the domaine in 1991, and continued working with him until André’s death in 2003. The estate now covers approximately 8 hectares and 14 appellations, with its strongest concentration in Meursault. Its holdings include four Meursault Premier Crus—Charmes, Gouttes d’Or, Genevrières and Porusots—along with several village-level Meursault parcels and vineyards in Puligny-Montrachet, Beaune and Pommard. François plows his vineyards, avoids herbicides, favors organic fertilizers such as humus and uses primarily organic treatments in the vineyard. Harvesting is done entirely by hand. His stated goal in the cellar is to preserve the identity of each terroir while producing wines with both immediate accessibility and the structure to develop in bottle.
- Vineyard: Buisson-Battault owns 0.25 hectare in Porusot le Dessus, the upper portion of the Meursault Premier Cru Porusots. The domaine’s parcel was planted in 1980 and is planted entirely to Chardonnay. The estate identifies the soils as clay-limestone, and Porusots is capable of producing particularly substantial Meursault while maintaining a strong mineral component. Buisson-Battault’s small holding and mature vines give the domaine concentrated material from one of the important Premier Cru sites in its home village. The domaine characterizes its Porusots as combining power and richness with a pronounced mineral quality, including the chalk and flint character it associates with the site.
- Winemaking: The Chardonnay is harvested by hand, with sorting performed when necessary. The wine is matured on its lees for 12 months in oak barrels, 20% of which are new, before being transferred to tank for a further six months. This 18-month élevage is the domaine’s approach for its higher appellations and allows the wine to spend substantial time on its lees while limiting the influence of new oak. François deliberately retains a maximum amount of lees during élevage, which he believes contributes texture, substance and the ability to age. The combination of one year in barrel followed by six months in tank also gives the wine time to come together before bottling without requiring additional oak exposure. A tasting of the 2022 during élevage described it as broad, silky and powerful, with high-toned citrus and considerable width.
- Technical Details: Meursault Premier Cru; 100% Chardonnay; lieu-dit Porusot le Dessus; 0.25-hectare domaine parcel; vines planted in 1980; clay-limestone soils; hand harvested. Élevage consists of 12 months on the lees in oak barrels with 20% new oak, followed by six months in tank. The domaine recommends serving the wine at 12–14°C and gives it a drinking horizon of approximately one to ten years, though well-stored bottles from a strong vintage such as 2022 can certainly be followed as they develop.
- Food Pairing: The domaine recommends shellfish, fish, white meats, foie gras and cheese, all of which suit the combination of richness and mineral structure found in Porusots. Lobster, scallops, turbot or Dover sole would be particularly good choices, as would roast chicken or veal with morels. The wine has enough weight for richer preparations, while its mineral side makes simply prepared shellfish equally appropriate.
