The domaine farms approximately 17 hectares across 24 appellations, including some of Burgundy's most celebrated Grand Cru and Premier Cru vineyards. Roughly 70% of the estate is planted to Chardonnay, and the family's philosophy remains rooted in meticulous vineyard work, low yields, manual harvesting, and restrained élevage that allows each vineyard to express its individual character. Although the domaine's Montrachet holdings have earned international acclaim, the same uncompromising standards are applied throughout the portfolio, including its Chassagne-Montrachet Premier Crus.
- Vineyard: Boudriotte is a Premier Cru climat situated within the historic Morgeot sector of southern Chassagne-Montrachet. Ramonet farms a 1.23-hectare parcel with an easterly exposure, planted on gravel and iron-rich marl soils that consistently produce Chardonnay with both richness and mineral precision. The site's combination of well-drained soils and favorable exposure promotes even ripening while preserving freshness. The 2022 vintage was characterized by a warm, dry growing season and healthy fruit, allowing for excellent ripeness while maintaining balance and acidity throughout the Côte de Beaune.
- Winemaking: Grapes are harvested entirely by hand before being gently pressed and fermented according to traditional Burgundian methods. The wine undergoes complete malolactic fermentation and is aged for approximately 12 to 15 months on its fine lees in French oak barrels, with approximately one-third new oak. Extended lees aging contributes texture and complexity, while the measured use of new oak preserves the vineyard's mineral character and natural precision. Ramonet's restrained approach to élevage emphasizes balance, longevity, and transparency of terroir rather than overt barrel influence.
