Producer: Domaine Vincent Dauvissat is universally regarded as one of the benchmark estates of Chablis and is widely considered, alongside François Raveneau, to represent the highest level of traditional winemaking in the region. The family's history in Chablis dates back several generations, with the modern domaine established through the work of Robert Dauvissat before being expanded by his son René. Today, Vincent Dauvissat oversees approximately 12 hectares of vineyards, including holdings in the Grand Crus Les Clos and Preuses, as well as Premier Crus La Forest, Séchet, and Vaillons. The estate has remained deliberately small, with vineyard work taking precedence over expansion. Viticulture emphasizes sustainable farming, meticulous canopy management, and manual harvesting, with chemical intervention kept to a minimum. In the cellar, fermentations occur naturally with indigenous yeasts before the wines mature in older French oak barrels rather than stainless steel alone. New oak is used sparingly, serving to frame the wine rather than define it. Extended élevage on the lees contributes texture and complexity while preserving the tension and mineral precision that have become signatures of the domaine. Dauvissat's wines are known for combining richness with remarkable energy and have earned a reputation for developing exceptional complexity over decades in bottle. Vineyard: La Forest is one of the most celebrated Premier Cru climats in Chablis and is situated immediately west of the village on the cooler slopes adjoining Montmains and Butteaux. The vineyard is planted on classic Kimmeridgian limestone and marl, composed of marine fossil deposits formed approximately 150 million years ago. These soils, rich in fossilized oyster shells and limestone, are fundamental to the saline, chalk-driven character associated with the finest Chablis. The relatively cool exposition preserves acidity while allowing slow, even ripening, producing wines that combine concentration with precision. Many critics have long considered La Forest to perform at a level approaching Grand Cru quality, particularly in the hands of Dauvissat, where the climat consistently delivers remarkable mineral tension, longevity, and complexity. The 2024 vintage has been noted for preserving the vineyard's classical profile despite a challenging growing season, with exceptional energy, chalky extract, and a distinctly saline finish.
Winemaking: Grapes are harvested entirely by hand before careful sorting and gentle pressing. Fermentation proceeds with indigenous yeasts in older French oak barrels, followed by full malolactic fermentation. Rather than emphasizing oak character, Dauvissat relies on well-seasoned barrels that allow gradual oxygen exchange while preserving the vineyard's identity. The wine remains on its fine lees for approximately eighteen months before bottling, developing additional texture without sacrificing freshness. Minimal intervention throughout élevage allows La Forest's naturally high acidity, chalk-derived minerality, and layered fruit profile to remain the defining characteristics of the finished wine. The resulting style consistently balances concentration with precision, making La Forest one of the domaine's most age-worthy Premier Cru bottlings.
