- Producer: Champagne Fleury is one of the true pioneers of biodynamic viticulture in Champagne. Based in Courteron in the Côte des Bar, the Fleury family has cultivated vineyards since 1895 and became the first estate in Champagne to convert entirely to biodynamic farming in 1989 under Jean-Pierre Fleury. Today, Benoît Fleury continues that philosophy, farming approximately 15 hectares using biodynamic principles, cover crops, horse plowing in selected parcels, and regenerative vineyard practices that promote healthy soils and balanced vines. Intervention in the cellar is intentionally minimal, allowing each cuvée to faithfully express its vineyard origin. Fleury's Champagnes have become benchmarks for terroir-driven, biodynamic Champagne, combining purity, energy, and remarkable aging potential with a distinctly vinous style.
- Vineyard: Fleur de l'Europe is produced from 85% Pinot Noir and 15% Chardonnay, sourced entirely from biodynamically farmed vineyards in the Côte des Bar. The vines are rooted in the region's distinctive Kimmeridgian limestone and clay soils, the same geological formation found in nearby Chablis. These soils, combined with the Côte des Bar's slightly warmer climate, allow Pinot Noir to achieve generous ripeness while maintaining vibrant natural acidity. Chardonnay contributes freshness and lift, while Pinot Noir provides structure, texture, and depth. The result is a Champagne that combines richness with remarkable mineral precision, faithfully expressing one of Champagne's most distinctive terroirs.
- Winemaking: Fermentation is carried out using indigenous yeasts in a combination of stainless steel tanks and neutral oak barrels, allowing the wine to gain texture while preserving freshness and vineyard character. The cuvée undergoes full malolactic fermentation before spending approximately five years on its lees, developing exceptional complexity and a remarkably fine mousse. Bottled as a Brut Nature (zero dosage), Fleur de l'Europe relies entirely on the quality and balance of the fruit rather than residual sugar. The finished wine offers aromas of Mirabelle plum, orchard fruit, citrus peel, brioche, toasted almond, and crushed chalk, carried by a palate that is simultaneously broad, energetic, and remarkably precise.
