- Producer: Champagne Fleury is based in Courteron in the Côte des Bar and was founded in 1895 by Emile Fleury. The estate farms approximately 15 hectares, planted primarily to Pinot Noir with smaller holdings of Chardonnay, Pinot Blanc and Pinot Gris. In 1970, Jean-Pierre Fleury converted the vineyards to organic farming, becoming one of the first producers in Champagne to do so. The estate adopted biodynamic viticulture in 1989 and is certified by Demeter. Today the domaine is managed by Jean-Sébastien Fleury and Benoît Fleury, continuing the family's commitment to biodynamic farming, indigenous biodiversity, and low-intervention winemaking. Pinot Noir remains the foundation of the estate's vineyards and the dominant variety throughout the Côte des Bar.
- Vineyard: Blanc de Noirs Brut is produced from 100% Pinot Noir grown in the Côte des Bar, where Kimmeridgian limestone and clay soils distinguish the region from the chalk-dominated terroirs farther north. The vineyards are farmed biodynamically, with cover crops, mechanical soil cultivation, and hand harvesting. The cuvée incorporates reserve wines aged in large oak foudres to maintain consistency from release to release. The combination of Pinot Noir from the Aube and reserve wines contributes both fruit concentration and structural depth while preserving freshness.
- Winemaking: Primary fermentation takes place in a combination of stainless steel tanks and oak, with a portion of the reserve wines matured in large oak foudres before blending. The wine undergoes bottle fermentation followed by extended aging on the lees prior to disgorgement. The cuvée is bottled as Brut, with approximately 9 g/L dosage, balancing the richness of Pinot Noir with the freshness characteristic of the estate's biodynamic vineyards. Fleury avoids unnecessary intervention throughout élevage while allowing the reserve wines and lees aging to contribute texture and complexity. Annual production is approximately 85,000 bottles.
