Producer: Champagne Dosnon is the personal project of Davy Dosnon, one of the leading figures of the Côte des Bar and a producer who has helped elevate the region to international acclaim. After studying viticulture and working at several prestigious Burgundy domaines, Dosnon returned to his family's vineyards in Avirey-Lingey to create wines that emphasize terroir over house style. Farming approximately 7.5 hectares using sustainable methods, he vinifies each parcel separately with native yeasts and minimal intervention. His Champagnes are celebrated for their mineral precision, low dosages, and unmistakably Burgundian character, earning him a devoted following among collectors and sommeliers alike.
Vineyard: Récolte Blanche is a Blanc de Blancs sourced entirely from Chardonnay grown in the Côte des Bar, Champagne's southernmost subregion. Unlike the chalk-dominated soils of the Montagne de Reims and Côte des Blancs, the Côte des Bar is characterized by Kimmeridgian and Portlandian limestone, remarkably similar to the soils found just to the south in Chablis. These fossil-rich clay and limestone soils give the wine exceptional mineral tension while maintaining generous fruit and texture. The vines average approximately 25 years of age, producing Chardonnay that beautifully balances richness with freshness, demonstrating why the Côte des Bar has become one of Champagne's most exciting regions for terroir-driven wines.
Winemaking: Grapes are harvested entirely by hand before gentle pressing and fermentation in used 228-liter Puligny-Montrachet barrels, preserving purity while adding subtle texture without noticeable oak influence. Native yeasts conduct the fermentation, and approximately 30% reserve wine aged in barrel is incorporated into the final blend to provide additional depth and complexity. The wine spends a minimum of two years aging on its lees before disgorgement and is bottled with a restrained Brut dosage of approximately 5 g/L. Dosnon avoids fining and filtration whenever possible, allowing the Chardonnay and distinctive limestone soils to remain the focal point of the finished wine.
