This is a 100% Chardonnay, from a single parcel called Chétillon de Haut (or “Chétillon de Haut”) in Le Mesnil-sur-Oger Grand Cru.

The soil is described as pure chalk with some colluvial limestone-chalk formations (iodised chalk essentially) which gives it strong mineral character.

Viticulture: organically farmed, certified Ecocert in 2022; biodynamic methods since 2021.

Vinification: spontaneous (ambient) yeast fermentations, both alcoholic and malolactic, no fining, no filtration. For example one batch: aged 10 months, 40% in 600 L barrels, 60% in stainless steel.
