Saturated ruby-red. Nose combines black raspberry preserves, dark chocolate, black pepper and game. Dense, very concentrated and very primary, but already shows lövely inner-mouth perfume. Still, a bit less expressive than the '94 was at the same stage. Dark berry flavor explodes on the tannic finish. This wine spine of acidity gives it great grip and aging potential. For the second consecutive year, this wine was bottled as VdP des Bouches du Rhone, rather than Les Baux de Provence. Vinous Media 91+
- Producer: Domaine de Trévallon is located near Saint-Étienne-du-Grès on the northern side of the Alpilles in Provence. Éloi Dürrbach established the vineyard in the early 1970s, planting Cabernet Sauvignon and Syrah on the domaine's limestone-rich terrain. Trévallon became particularly distinctive for maintaining a roughly equal blend of these two varieties. That decision eventually had an important consequence: when the Les Baux-de-Provence appellation regulations were established, the permitted proportion of Cabernet Sauvignon was lower than Dürrbach was willing to accept. Rather than change the wine to fit the appellation, he retained Trévallon's established blend and beginning with 1994 bottled the red as Vin de Pays des Bouches-du-Rhône. The domaine is particularly associated with long-lived reds; Trévallon's own guidance states that its red can be enjoyed during its first year after bottling with decanting, but thereafter recommends waiting at least ten years for it to develop.
- Vineyard: Trévallon's vineyards sit amid the Alpilles, where limestone is a defining feature of the site. The exposed white limestone and surrounding Provençal landscape distinguish the estate from the heavier alluvial terrain found elsewhere in southern France. The domaine's Cabernet Sauvignon and Syrah are planted in this limestone environment, and the 50/50 relationship between the two grapes had already become firmly established by 1995. According to Éloi Dürrbach, the Cabernet component had previously represented about 60% of the blend but was reduced to 50% after 1990. The domaine describes the 1995 growing season as having an ideal summer followed by a very wet September. Despite the difficult end to the season, it considers 1995 a vintage of very good quality. Harvest began on September 25 and finished October 4, 1995.
- Winemaking: The 1995 is a blend of exactly 50% Cabernet Sauvignon and 50% Syrah. Trévallon's traditional red-wine method is deliberately low-intervention: the red has historically been fermented with a substantial whole-cluster component and then given a long élevage of approximately two years in older oak barrels and large wooden foudres, rather than being shaped by new oak. The finished reds are traditionally bottled without filtration. This long élevage and avoidance of prominent new oak are important to Trévallon's style because the structure comes primarily from the Cabernet Sauvignon, Syrah, whole clusters and extended maturation rather than from new-barrel tannin or flavoring. Contemporary accounts of the estate likewise describe Dürrbach's philosophy as handling the wine as little as possible and allowing the fruit and site to remain central.

The domaine's original 1995 label specifically states “VIN DE PAYS DES BOUCHES DU RHONE,” “RED TABLE WINE,” “ALC. 13% BY VOL.” and “MIS EN BOUTEILLE AU DOMAINE.” That original-label information is particularly useful here because later merchant databases sometimes retroactively categorize older Trévallon vintages as IGP Alpilles.
- Food Pairing: Roast leg of lamb with rosemary and garlic, grilled lamb chops, beef rib roast, côte de boeuf, braised short ribs, venison, wild boar, duck, beef or lamb with black truffles, mushroom dishes and aged hard cheeses. At more than 30 years from harvest, bottle condition and storage history will influence how an individual bottle presents, so I would favor dishes that complement mature Cabernet-Syrah rather than overwhelm it. Lamb and beef work naturally with the wine's structure, while mushrooms, game and truffles can complement the earthy and savory development associated with mature Trévallon.
