- Vineyard: Blanc de Noirs is produced entirely from 100% Pinot Noir grown in Grand Cru vineyards surrounding Bouzy, one of Champagne's most celebrated villages for the variety. The vines are rooted in the region's distinctive chalk subsoil with clay-rich topsoils, allowing Pinot Noir to achieve both generous ripeness and remarkable mineral precision. Biodynamic farming encourages deep root systems and naturally balanced vines, resulting in fruit of exceptional concentration while preserving freshness and acidity. Bouzy has long been regarded as one of the reference terroirs for Pinot Noir in Champagne, and this cuvée beautifully captures both its richness and its unmistakable chalk-driven character.
- Winemaking: Fermentation takes place with indigenous yeasts in a combination of small oak barrels and larger foudres, allowing texture and complexity to develop without masking the vineyard's identity. Malolactic fermentation occurs naturally, softening the wine while preserving balance and freshness. The Champagne spends several years aging on its lees before disgorgement, developing remarkable depth, creamy texture, and an exceptionally fine mousse.
