

Notes:
- Producer: Benoît Lahaye took over his family's estate in Bouzy in 1993 and is widely regarded as one of Champagne's leading grower-producers. The estate encompasses approximately 4.8 hectares, 88% of which are planted to Pinot Noir. Lahaye converted the vineyards to organic farming in 2003 and biodynamic farming in 2010, making him one of the early pioneers of biodynamics in Champagne.
- Vineyard: The fruit is sourced primarily from Grand Cru vineyards in Bouzy, with additional holdings in Ambonnay and Tauxières. Bouzy is one of Champagne's most celebrated Pinot Noir villages and has long been considered one of the benchmark terroirs of the Montagne de Reims. The vineyards are planted on chalk and limestone-rich soils and include vines ranging from 30 to 60 years of age.
- Winemaking: Produced from 100% Pinot Noir sourced primarily from the parcels Vaux-Bétins and Raies Tortues in Bouzy. Fermentation occurs with indigenous yeasts, and the wines are vinified in oak barrels rather than stainless steel. The Champagne undergoes extended lees aging and is bottled as Extra Brut with a very low dosage. The estate follows biodynamic farming practices and minimizes intervention throughout the winemaking process.
- Technical Details: Champagne Grand Cru, 100% Pinot Noir, Extra Brut, organically and biodynamically farmed (Biodyvin certified), barrel-fermented, extended lees aging. Benoît Lahaye is considered one of the foremost specialists of Pinot Noir in Champagne and has been producing Blanc de Noirs bottlings since the 1980s.
- Food Pairing: Roast chicken, duck breast, pork loin, tuna, salmon, mushroom dishes, Comté, and aged Gouda. The wine's Pinot Noir structure and vinous character allow it to pair comfortably throughout a meal rather than serving solely as an aperitif.
