- Producer: Domaine Jean-Marc Pillot is a fifth-generation family estate based in Chassagne-Montrachet. Jean-Marc joined the family domaine in 1985 before assuming full responsibility in 1991, and today works alongside his son, Antonin, who represents the sixth generation. The estate farms approximately 12 hectares across Chassagne-Montrachet, Puligny-Montrachet, Saint-Aubin, and Santenay. Holdings include village, Premier Cru, and Grand Cru vineyards. Vineyard management focuses on sustainable farming, regular plowing to encourage deep root systems, careful canopy management, and low yields to maximize fruit quality. The domaine is equally respected for both its Chardonnay and Pinot Noir, with production remaining relatively small by Burgundy standards.
- Vineyard: "Mes Vieilles Vignes" is produced from multiple village parcels in Chassagne-Montrachet planted primarily in 1960, with an average vine age exceeding 60 years. The vineyards are rooted in limestone and clay soils characteristic of the southern Côte de Beaune, where Pinot Noir develops both structure and freshness. Chassagne-Montrachet is best known for white wines, but nearly half of the appellation is planted to Pinot Noir. The old vines naturally produce lower yields and smaller berries, resulting in greater concentration while maintaining the bright acidity that defines the appellation's red wines.
- Winemaking: Produced from 100% Pinot Noir, the grapes are harvested entirely by hand and sorted before fermentation. Jean-Marc Pillot typically vinifies his reds with a high proportion of whole clusters, depending on stem maturity, to enhance aromatic complexity and structure. Fermentation is carried out with indigenous yeasts, followed by aging for approximately 18 months in French oak barrels, only a modest percentage of which are new. The wine then spends several additional months in stainless steel before bottling. The restrained use of new oak preserves varietal character and allows the vineyard to remain the primary expression of the finished wine.
- Food Pairing: Roast chicken, duck breast, pork tenderloin, grilled lamb, mushroom risotto, coq au vin, beef bourguignon, and aged Alpine cheeses such as Comté or Beaufort. The wine's bright acidity, moderate tannins, and earthy Pinot Noir profile also make it well suited to grilled salmon, game birds, and dishes featuring wild mushrooms.
