Producer: Antoine Bouvet is a fourth-generation grower based in Mareuil-sur-Aÿ, where his grandfather, Guy Bouvet, established the family domaine in 1970. Since taking over the estate, Antoine has focused on producing small-production, terroir-driven Champagnes that emphasize vineyard expression over house style. The domaine farms approximately 5 hectares of Premier Cru vineyards across Mareuil-sur-Aÿ, Bisseuil, and Avenay-Val-d'Or, relying on sustainable farming practices, regular soil cultivation, and biodynamic principles where appropriate. Herbicides have been eliminated from the vineyards, and fruit is harvested entirely by hand. Every parcel is vinified separately using indigenous yeasts, allowing Antoine to preserve the identity of each site before blending or bottling. Production remains extremely limited, with many cuvées consisting of only a few hundred bottles or magnums, reflecting the estate's emphasis on precision rather than volume.
Vineyard: Les Monts de la Vallée is produced exclusively from 100% Pinot Noir grown in Premier Cru vineyards located in Bisseuil, Mareuil-sur-Aÿ, and Avenay-Val-d'Or, three historic villages in the Grande Vallée de la Marne renowned for producing structured, long-lived Pinot Noir. The fruit is sourced from vines averaging 40 years of age, planted on the region's characteristic Campanian chalk overlain by clay and limestone. The chalk subsoil provides excellent drainage and contributes mineral precision, while the clay retains moisture during the growing season and adds breadth to the finished wine. Rather than highlighting a single parcel, Les Monts de la Vallée expresses a mosaic of Premier Cru sites that collectively capture the character of the eastern Vallée de la Marne. The 2022 growing season provided healthy fruit with excellent ripeness while maintaining the natural acidity necessary for long-term balance.
Winemaking: Produced from 100% hand-harvested Pinot Noir, the grapes are pressed as whole clusters before fermenting with indigenous yeasts. The base wine is matured for approximately eight months in French oak barrels, encouraging texture and complexity without emphasizing oak influence. Following tirage, the wine spends approximately 24 months aging on its lees before disgorgement. The finished Champagne receives no dosage (0 g/L), allowing the fruit, mineral structure, and vineyard character to remain fully exposed. Antoine Bouvet's approach is intentionally minimalist throughout the cellar, with low sulfur additions and limited intervention, allowing each vintage to reflect the growing season while maintaining the domaine's commitment to purity and site expression. The magnum format further benefits from slower maturation, often providing additional depth and longevity compared with the standard bottle.
Food Pairing: The combination of Pinot Noir structure, barrel élevage, and zero dosage makes Les Monts de la Vallée particularly versatile at the table. It pairs naturally with roasted chicken, guinea fowl, veal, pork loin, duck breast, grilled lobster, scallops, Dover sole, and roasted turbot. The wine's vinous texture also complements mushroom dishes, truffle preparations, and aged cheeses such as Comté, Beaufort, and Chaource. Served from magnum, it is particularly well suited to larger gatherings and extended meals, where its slower evolution in bottle allows additional aromatic complexity to emerge.
