Producer: Antoine Bouvet is a small, family-owned grower based in Mareuil-sur-Aÿ, in the Grande Vallée de la Marne. The estate traces its origins to 1970, when Guy Bouvet established Champagne Guy Bouvet. Today, his grandson Antoine Bouvet has developed the domaine into one of the region's most respected artisanal producers. Farming approximately 5 hectares of Premier Cru vineyards in Mareuil-sur-Aÿ, Bisseuil, and Avenay-Val-d'Or, the estate emphasizes sustainable and biodynamic-inspired viticulture, including regular soil cultivation, cover crops, and the elimination of herbicides. Production is intentionally small, with each cuvée vinified separately to preserve the identity of its vineyards. In the cellar, Antoine favors spontaneous fermentations, extended élevage in oak, and minimal intervention, allowing the wines to express both the character of the growing season and the underlying terroir.
Vineyard: Les Monts de la Vallée Rosé is sourced from Premier Cru vineyards in Mareuil-sur-Aÿ, Bisseuil, and Avenay-Val-d'Or, three villages renowned for producing structured Pinot Noir in the Grande Vallée de la Marne. The Base 2023 release follows the same philosophy as previous editions, combining a predominantly white base wine with a small proportion of Pinot Noir saignée to create both color and additional complexity. The white base wine is composed primarily of Pinot Noir with a small percentage of Chardonnay, while the saignée portion comes entirely from Pinot Noir. The vineyards are rooted in the region's classic chalk and limestone subsoils overlain by clay, providing excellent drainage while retaining sufficient moisture during dry growing seasons. Many of the vines average 40 years of age, naturally limiting yields and contributing greater concentration to the fruit. The combination of old vines, Premier Cru sites, and careful farming allows the rosé to retain freshness while developing the depth expected from Pinot Noir grown in Mareuil-sur-Aÿ.
Winemaking: The Base 2023 release follows Antoine Bouvet's low-intervention philosophy. Fruit is harvested entirely by hand and gently pressed as whole clusters. Alcoholic fermentation occurs with indigenous yeasts, while both fermentation and élevage take place primarily in French oak barrels, contributing texture rather than overt oak character. The rosé is produced by blending the estate's white base wine with a carefully measured proportion of Pinot Noir saignée, rather than relying solely on short skin contact. The finished wine is bottled as Extra Brut, allowing the fruit, mineral structure, and vineyard character to remain the primary focus. Dosage is intentionally restrained, reflecting the estate's preference for preserving natural balance rather than emphasizing sweetness. As with all Antoine Bouvet bottlings, production remains extremely limited, with only a few hundred bottles produced for each release.
Food Pairing: The combination of Pinot Noir structure, restrained dosage, and barrel élevage makes Les Monts de la Vallée Rosé particularly versatile at the table. It pairs naturally with duck breast, roasted quail, pork tenderloin, tuna, salmon, grilled lobster, and veal, while its freshness also complements charcuterie, mushroom dishes, and soft-ripened cheeses such as Brie de Meaux and Chaource. The wine's vinous texture allows it to accompany an entire meal rather than serving solely as an apéritif.
