- Producer: Domaine Henri & Philippe Jouan is a small family estate based in Morey-Saint-Denis, with holdings concentrated in and around the central Côte de Nuits. The domaine remains decidedly traditional in scale and approach, producing a compact range that stretches from Coteaux Bourguignons through Chambolle-Musigny, Gevrey-Chambertin, Morey-Saint-Denis Premier Cru and Clos Saint-Denis Grand Cru. Philippe Jouan works with an unusually high proportion of mature vines; across the domaine, average vine age is approximately 70 years, and yields are generally kept low. The difficult 2021 growing season reduced production to roughly half of normal, but the domaine maintained its established cellar approach rather than trying to compensate through heavier extraction. Jouan harvested beginning September 15, producing wines with moderate alcohol, bright acidity and the naturally fresh profile of the vintage.
- Vineyard: Cuvée Thomas is 100% Pinot Noir from old vines in the Côte de Nuits. The parcel sits well below the main road near Morey-Saint-Denis, outside the boundaries that would allow it to carry the Bourgogne appellation, hence its classification as Coteaux Bourguignons. Despite the broader appellation, this is estate-grown Côte de Nuits Pinot Noir rather than a regional blend assembled from fruit purchased across Burgundy. The vines are more than 40 years old, giving the wine a considerably stronger vineyard identity than its modest appellation might suggest. The 2021 vintage brought a much smaller crop across Burgundy, with spring frost and a cool, wet growing season significantly reducing yields. At Jouan, the resulting crop was approximately half a normal harvest, adding another element of natural concentration to an already old-vine cuvée.
- Winemaking: Philippe Jouan maintained a traditional approach in 2021, with relatively little change in the cellar despite the unusually small crop. Across the domaine, he increased the use of whole clusters to approximately 50% in 2021, compared with around 30% the previous year. The wines finished around 13–13.5% alcohol, retaining the bright acidity and red-fruited character of the cooler growing season. Jouan's restrained approach is particularly well suited to Cuvée Thomas: rather than trying to build a larger wine than the vineyard naturally provides, the winemaking preserves the freshness and old-vine character that distinguish the cuvée. The result is a useful introduction to the domaine's style and a rare example of Coteaux Bourguignons coming from a small Côte de Nuits grower whose holdings extend all the way to Grand Cru.

- Food Pairing: The freshness and moderate weight of 2021 Pinot Noir make Cuvée Thomas especially versatile at the table. Roast chicken, pork tenderloin, duck confit, grilled sausages, or a simple steak-frites would all work well. Its lighter structure also makes it a good match for mushroom dishes, lentils, roast root vegetables and charcuterie. For cheese, try Comté, Tomme de Savoie or a mild Époisses. Serving it slightly cool will emphasize the freshness of the vintage and the wine's old-vine Pinot Noir character.
