Every time I ask people what their “go-to” valueplay is in White Burgundy, the response is Chablis! I’ve been recommending Chablis for as long as I can remember and you’ll be hard pressed to find someone taking the other side of that bet. The wines represent exactly what I look for in White Burgundy - citrus leaning, liquid minerals, with freshness and acidity that never fatigues one’s palate. It's a winning combination!


In the last 10 years, we’ve seen many of our favorite Chablis’ start to give the prices in Cote de Beaune a run for their money, well sort of. One domaine that continues to deliver not only top phenomenal quality but also friendly prices are the wines from Domaine Servin. I buy these wines every year because they overdeliver, especially their best 1er cru Montee de Tonnerre. When you stick your nose in the glass, you know you can be no other place than Chablis. I love the hints of seashell and seabreeze this wine always displays. There is nothing better as the days begin to get warmer and a dozen oysters are calling your name. There aren’t many 1er crus priced under $40 that deliver this sort of quality! I highly recommended these!

A background whiff of menthol is present on the cool and equally airy aromas of white orchard fruit, iodine and oyster shell hints. The racy, saline and utterly delicious middleweight flavors also exude evident salinity on the bone-dry, citrusy and tightly wound finale. This fine effort is really quite stylish though one that will definitely need at least some patience.

Here too there is enough wood influence present to mention on the pure and elegant nose of spicy floral, apple and ocean spray. I very much like the texture of the vibrant and stylish middleweight flavors that flash ample minerality on the youthfully austere and long finish where a touch of bitter lemon zest slowly emerges. Lovely.

Pretty and charming, the 2021 Chablis 1er Cru Montée de Tonnerre bursts with aromas of orange blossom, peach, white flowers, citrus zest and beeswax. Medium to full-bodied, ample and fleshy, it's a giving, expressive wine that concludes with a saline finish.
