- Producer: Waris-Larmandier is a family-owned grower estate based in Avize Grand Cru in the Côte des Blancs. The domaine was established through the marriage of the Waris and Larmandier families and is today managed by Stéphanie and Olivier Waris. The estate farms approximately 11 hectares of vineyards, the majority planted to Chardonnay, across the Grand Cru villages of Avize, Cramant, Chouilly, Oger, and Le Mesnil-sur-Oger, with additional holdings in the Sézannais. Vineyard work follows sustainable farming practices with mechanical soil cultivation, permanent grass cover where appropriate, and reduced chemical inputs. Individual parcels are harvested separately and vinified to preserve the character of each village before blending.
- Vineyard: Particules Crayeuses is produced from 100% Chardonnay sourced exclusively from five Grand Cru villages in the Côte des Blancs: Avize, Cramant, Chouilly, Oger, and Le Mesnil-sur-Oger. These vineyards are rooted in Campanian chalk, the defining soil of the Côte des Blancs, providing excellent drainage, water retention, and the mineral profile associated with Grand Cru Chardonnay. Rather than highlighting a single village, the cuvée is intended to express the collective character of the Côte des Blancs through the combination of these five Grand Crus. Annual production is approximately 10,000 bottles.
- Winemaking: The base wines are fermented in temperature-controlled stainless steel tanks to preserve freshness and varietal definition. Following fermentation, the wine remains on its fine lees before bottling for secondary fermentation. The cuvée undergoes extended bottle aging prior to disgorgement and is finished with an Extra Brut dosage, allowing the chalk-driven character of the Chardonnay to remain the dominant feature of the wine. The producer's objective is to emphasize freshness, salinity, and precision rather than autolytic richness or oak influence.
