- Producer: Domaine Petit & Bajan is a grower Champagne estate established in 2008 by Richard Petit and Véronique Bajan, bringing together two families with long histories of grape growing in Champagne. The domaine is based in Avize, in the Côte des Blancs, and farms just over seven hectares of vines. Richard’s family holdings are centered on Chardonnay in Avize and Cramant, while Véronique’s family contributes Pinot Noir vineyards in Verzenay. This combination of Côte des Blancs Chardonnay and Montagne de Reims Pinot Noir forms the basis of Ambrosie, the estate’s Grand Cru Brut.
- Vineyard: Ambrosie is produced entirely from Grand Cru vineyards and blends fruit from Avize, Cramant and Verzenay. Avize and Cramant, both in the Côte des Blancs, supply the Chardonnay, while the Pinot Noir comes from Verzenay in the Montagne de Reims. The blend is 70% Chardonnay and 30% Pinot Noir. The estate’s Chardonnay vines grow on pure chalk soils, while the Verzenay Pinot Noir comes from clay-influenced soils over chalk. Bringing these two areas together gives Ambrosie a broader expression of Grand Cru Champagne than a wine drawn solely from the Côte des Blancs.
- Winemaking: The grapes are harvested by hand and fermented in temperature-controlled stainless-steel tanks using selected yeasts. Malolactic fermentation is allowed, and the wine subsequently undergoes its secondary fermentation and extended maturation in bottle. Ambrosie spends a minimum of three years on the lees before release. The élevage is deliberately straightforward, with stainless steel rather than barrel used for the primary fermentation, keeping the focus on the combination of Chardonnay and Pinot Noir from the estate’s three Grand Cru villages.
- Technical Details: 70% Chardonnay / 30% Pinot Noir. Champagne AOC, Grand Cru. Estate-grown fruit from Avize, Cramant and Verzenay. Hand harvested. Fermented in temperature-controlled stainless steel with selected yeasts. Malolactic fermentation allowed. Minimum three years aging on the lees. Dosage: 3 g/L. Brut. - Food Pairing: The combination of Chardonnay and Pinot Noir makes Ambrosie versatile at the table. It works well as an aperitif and with oysters, sushi, crudo and other fresh seafood. The additional structure supplied by Pinot Noir also makes it suitable for grilled fish, roast poultry and lighter meat preparations. Firm cheeses such as Comté are another natural pairing.
