- Producer: Champagne Pascal Lejeune is a grower-producer based in Moussy, south of Épernay. Pascal and Sandrine Lejeune established the Champagne house in 1995, building upon family vineyards that date back several generations. The estate farms approximately 8 hectares across 42 parcels in Moussy, Pierry, Vinay, and Épernay. Thibaut Lejeune joined the domaine in 2015 as the fifth generation of the family.
- Vineyard: Anaphore Blanc de Blancs is sourced exclusively from Chardonnay grown in the Premier Cru village of Pierry, specifically from the lieu-dit Les Temples. The vineyard is planted on soils composed of clay, marl-limestone, sand, silt, and millstone fragments. The average vine age is approximately 25 years.
- Winemaking: Produced from 100% Chardonnay harvested in 2019. The wine undergoes no malolactic fermentation to preserve acidity and freshness. Vinification includes 6 months in stainless steel followed by 10 months of aging, with approximately 30% of the wine matured in Burgundy oak barrels with regular lees stirring. The wine was bottled with 4 g/L dosage (Extra Brut) and spent roughly 7 years on lees prior to release.
- Technical Details: 100% Chardonnay, Premier Cru Pierry fruit, 2019 harvest, Extra Brut (4 g/L dosage), no malolactic fermentation, extended lees aging, approximately 12% alcohol. The cuvée is part of the estate's "Figure de Style No. 2 – Anaphore" series and production is limited to roughly 1,235 bottles.
- Food Pairing: Oysters, scallops, shellfish, sushi, sashimi, grilled white fish, lobster, and soft-ripened cheeses. The estate and merchants specifically recommend seafood and fish-based preparations.
