Vineyard work focuses on preserving biodiversity through permanent cover crops, reduced chemical treatments, and extensive manual labor from pruning through harvest. Rather than pursuing a heavily manipulated house style, Pascal Lejeune crafts Champagnes that emphasize freshness, precision, and the natural character of each vintage and grape variety. Production remains relatively small, allowing meticulous attention throughout both the vineyard and cellar.
- Vineyard: Anaphore Blanc de Blancs is produced entirely from 100% Chardonnay grown on clay-limestone soils in the Coteaux Sud d'Épernay. This often-overlooked area, neighboring the Côte des Blancs, has become increasingly recognized for producing Chardonnays that combine generous fruit with bright mineral tension. The limestone-rich subsoil preserves freshness while the clay contributes texture and depth, resulting in a Blanc de Blancs that balances elegance with approachability. The cuvée is based on the 2019 vintage, a warm growing season that produced healthy fruit with excellent concentration while retaining vibrant acidity.
- Winemaking: Produced using the traditional méthode champenoise, Anaphore is fermented in stainless steel to preserve the purity of Chardonnay and intentionally does not undergo malolactic fermentation, allowing the wine to retain vibrant acidity and a focused mineral profile. Extended lees aging adds texture and complexity while maintaining freshness, and the wine is bottled as an Extra Brut, allowing the fruit and terroir to remain the central focus. The resulting Champagne is clean, linear, and energetic, emphasizing citrus, orchard fruit, and chalk-driven precision rather than richness from dosage or oak.
