- Producer: Dehours & Fils is a fourth-generation grower estate based in Mareuil-le-Port in the Vallée de la Marne. The domaine is managed by Jérôme Dehours, who assumed control in 1996 and shifted the estate toward parcel-by-parcel viticulture and small-production, terroir-driven Champagnes. The family farms approximately 14 hectares divided among more than 40 individual parcels spread across Mareuil-le-Port, Oeuilly, Troissy, Cerseuil, and Port-à-Binson. Vineyard work emphasizes sustainable farming, cover crops, mechanical cultivation, and minimal chemical intervention. Individual parcels are harvested and vinified separately to preserve their distinct characteristics before either remaining as single-vineyard bottlings or contributing to estate blends.
- Vineyard: Maisoncelle is one of the historic lieux-dits in Port-à-Binson, situated on the northern bank of the Marne River. The vineyard is planted entirely to Pinot Noir, with many vines exceeding 50 years of age. The site consists primarily of clay-limestone soils with underlying chalk, providing both water retention and drainage while contributing structure and mineral freshness. Maisoncelle forms part of Dehours' Lieu-Dits Collection, a series dedicated to individual vineyard expressions. Beginning with the 2013 harvest, these wines have been produced using the estate's Réserve Perpétuelle system, where a portion of the previous reserve is retained and replenished each vintage, creating continuity while preserving the identity of the vineyard.
- Winemaking: Grapes are harvested by hand and fermented with indigenous yeasts in a combination of 200-, 300-, and 500-liter oak barrels. The wine undergoes full malolactic fermentation, with aging continuing on the fine lees in barrel before bottling. The perpetual reserve system incorporates multiple harvests, with each new vintage replacing approximately 30–50% of the reserve while maintaining the original base. Bottles spend at least 36 months on the lees before disgorgement. The wine is neither fined nor filtered and is bottled with no dosage (0 g/L), despite the Extra Brut designation, emphasizing the vineyard's structure and purity.
