Producer

Mathilde Savoye represents a new generation of independent grower-producers focused on showcasing the remarkable potential of Pinot Meunier in the Vallée de la Marne. Based in La Neuville-aux-Larris, she farms a small collection of family vineyards with an emphasis on sustainable viticulture, low-intervention winemaking, and expressing individual vineyard sites rather than blending away their character. While many Champagne houses continue to treat Meunier as a supporting grape, Savoye has made it the centerpiece of her domaine, producing a range of single-variety Champagnes that highlight its freshness, aromatic complexity, and ability to faithfully transmit terroir. Production remains extremely limited, with every vineyard vinified separately before blending decisions are made. The result is a collection of Champagnes that are energetic, precise, and unmistakably grower-driven.

Vineyard

Blanc de Meunier Extra Brut is produced entirely from 100% Pinot Meunier grown in two vineyard parcels: Les Chapelleries in Cuchery and La Loge des Vignes in Baslieux-sous-Châtillon, both situated in the Vallée de la Marne. Les Chapelleries is planted to 61-year-old vines rooted in brown limestone soils over hard limestone, while the younger La Loge des Vignes parcel, planted 19 years ago, grows on brown limestone soils mixed with calcareous sands and hard limestone. The combination of mature vines, hand harvesting, and these limestone-rich soils gives the wine both generous fruit and impressive mineral tension, while illustrating the distinctive personality Pinot Meunier can achieve when grown on exceptional terroir.

Winemaking

The wine is based on the 2022 vintage and fermented entirely in stainless steel following whole-cluster pressing. After approximately five months of élevage in tank, the wine is bottled without undergoing malolactic fermentation, preserving vibrant natural acidity and precision. It then spends approximately 17 months on its lees before disgorgement, developing additional texture while maintaining freshness. Bottled as an Extra Brut with only 3 g/L dosage, the finished Champagne emphasizes purity, tension, and the naturally expressive character of Pinot Meunier rather than richness derived from dosage or oak. This restrained approach allows the grape's orchard fruit, floral aromatics, and chalky finish to remain the focal point.

Food Pairing

Fresh oysters, shrimp, scallops, sashimi, grilled white fish, roast chicken, pork tenderloin, goat cheese, and young Comté all pair beautifully with this Blanc de Meunier. The wine combines aromas of white peach, pear, yellow apple, citrus, and delicate white flowers with a palate that is linear, fresh, and mineral-driven. Its bright acidity, fine mousse, and restrained dosage make it equally compelling as an aperitif or alongside lighter seafood and poultry dishes, while the purity of the fruit allows Pinot Meunier to take center stage in a style that is both refreshing and distinctly terroir-focused.
