Notes:
La Rogerie in Flavigny, one of the Côte des Blancs’s contemporary reference points, is the work of a young couple, François Petit (from Champagne) and Justine Boxler (from Alsace). They started out with just 0.25 hectares in Chemin de Chalons, harvesting their first fruit in 2018, and have gradually taken over François's family domaine while also acquiring more land, now working with more than two hectares. The estate’s patrimony is enviable, consisting of old massal selection Chardonnay, with 90% located in Avize and the remainder in Oger and Cramant. In their first years, they focused on renovating the old property and restoring the vineyards to health by de-compacting soils, planting cover crops, encouraging biodiversity and changing trellising to offer more shade to grapes and soil.
Fruit is picked at physiological maturity, and élevage takes place in oak for 11 months (with new barrels purchased annually, aiming to build their own stock to use for up to five years), followed by disgorgement with minimal dosage or no dosage at all—all that's required, given the vinous style. Their wines are intensely flavored and concentrated, anchored by bright acids and vivid chalkiness. Currently, the couple produces two superb blanc de blancs: NV Bourg/Sud and the vintage-dated Champ Bouton. The range will soon expand to include Bourg/Nord and two more lieu-dit bottlings. For now, the single-parcel wines are vintage-dated, but the long-term goal is to build reserve wines, minimizing the influence of a single year on the wine.
