- Producer: Champagne Guy de Forez is a récoltant-manipulant (grower-producer) based in Les Riceys, the largest wine-growing commune in Champagne. The estate farms approximately 9 hectares and is planted predominantly to Pinot Noir (97%), with small amounts of Chardonnay and Meunier.
- Vineyard: The vineyards are located in the Côte des Bar subregion of southern Champagne, an area geologically closer to Chablis than the Marne Valley. The soils are composed primarily of Kimmeridgian limestone and clay, the same geological formation found in many of Burgundy's most famous vineyards. Les Riceys is also the only village in Champagne permitted to produce the still wine appellation Rosé des Riceys.
- Winemaking: Les Riceys Blanc de Noirs is produced from 100% Pinot Noir. The wine is made using the traditional Champagne method and is sourced exclusively from estate vineyards in Les Riceys. Guy de Forez vinifies in stainless steel and uses a traditional Coquard press.
- Technical Details: Champagne AOC, Blanc de Noirs, 100% Pinot Noir, approximately 12-12.5% alcohol. The wine is sourced entirely from the Côte des Bar and reflects the richer, more vinous style often associated with Pinot Noir-based Champagnes from the Aube.
- Food Pairing: Roast chicken, duck breast, pork loin, salmon, tuna, mushroom dishes, Comté cheese, and charcuterie. The wine's Pinot Noir structure and vinous character make it particularly versatile at the table.
