
Notes:
- Producer: Christian Bourmault comes from a family of Champagne growers whose history in the region dates to the 19th century. Christian took over the family domaine in 1981, expanding the estate and eventually beginning commercial production under his own name. The domaine is based in Avize, in the Côte des Blancs, with vineyards extending beyond Avize into neighboring Chardonnay territory as well as the Vallée de la Marne, where the family farms Pinot Noir and Pinot Meunier. Today the estate works approximately 6.5 hectares, and barrel fermentation and élevage have long been important parts of the house style.
- Vineyard: Unlike the Chardonnay-dominated wines most closely associated with Avize, Hermance is built primarily around Pinot Noir. The current release is a blend of 80% Pinot Noir, 15% Chardonnay and 5% Pinot Meunier. The estate has Pinot Noir holdings in the Vallée de la Marne alongside Chardonnay vineyards in the Côte des Blancs, giving Hermance a different composition and identity from Bourmault’s Blanc de Blancs cuvées. The vineyards are farmed organically, although the domaine is not certified organic.
- Winemaking: Hermance brings together all three principal Champagne varieties, with Pinot Noir accounting for the large majority of the blend. The wine is aged for 36 months in cask, continuing a longstanding emphasis on wood at Christian Bourmault. Barrel fermentation and élevage have been part of the domaine’s approach for decades; historical releases of Hermance were also raised in wood, making this an established element of the cuvée rather than a recent stylistic change.
- Technical Details: 80% Pinot Noir, 15% Chardonnay, 5% Pinot Meunier. Champagne AOC. Non-vintage. Estate based in Avize, Côte des Blancs, with additional vineyard holdings in the Vallée de la Marne. - Food Pairing: The Pinot Noir-led blend and extended élevage make Hermance a Champagne that can comfortably move beyond the aperitif. It should work particularly well with roast chicken, pork, charcuterie, mushrooms, richer seafood preparations and aged cheeses. It would also be a good match for dishes with a little more depth, such as roast duck or seared scallops.
