- Producer: Domaine Virely-Rougeot is a family-owned estate based in Meursault with a history dating back to the early twentieth century. Today the domaine is managed by Patrick Virely and his family, who farm approximately 9 hectares of vineyards across Meursault, Beaune, Pommard, Auxey-Duresses, and several surrounding Côte de Beaune appellations. Vineyard work is carried out using sustainable farming practices, with an emphasis on hand harvesting, controlled yields, and maintaining healthy soils. The estate follows traditional Burgundian winemaking, relying on careful vineyard management and restrained cellar techniques to allow each appellation to reflect its place of origin. Production remains relatively small, with village wines forming the foundation of the domaine's portfolio.
- Vineyard: This Meursault is sourced from several village-level parcels within the Meursault AOC, one of the Côte de Beaune's most recognized Chardonnay appellations. The vineyards are planted on the area's characteristic clay-limestone and marl soils, which provide excellent drainage while retaining sufficient moisture during the growing season. Most vineyards are situated on gentle east and southeast-facing slopes that receive morning sun while benefiting from cooler afternoon temperatures. Although Meursault contains no Grand Cru vineyards, it is home to numerous highly regarded Premier Crus and has long been associated with Chardonnay capable of extended bottle aging. The combination of limestone-rich subsoils and mature vines contributes to wines that balance richness, acidity, and mineral definition.
- Winemaking: Produced from 100% Chardonnay, the grapes are harvested entirely by hand and gently whole-cluster pressed before fermentation. Alcoholic fermentation takes place in French oak barrels, followed by approximately 12 months of élevage on the fine lees. The estate employs a moderate proportion of new oak, allowing the fruit and vineyard character to remain at the forefront while adding texture and structural support. Lees contact contributes additional complexity and mouthfeel, while careful barrel aging preserves freshness and balance. The wine is bottled after sufficient maturation to integrate the oak and maintain the natural expression of Meursault Chardonnay.
- Food Pairing: Pair with lobster, scallops, Dover sole, halibut, roast chicken, veal in cream sauce, mushroom risotto, crab cakes, or aged Comté. The wine's combination of bright acidity, lees-derived texture, and moderate oak also complements roasted poultry, grilled seafood, and classic Burgundian cream-based dishes.
