- Producer: Domaine Virely-Rougeot is a family estate based in Pommard, farming approximately 9 hectares across Pommard, Beaune, and Meursault. The domaine traces its modern history to Louis Virely, who established himself in Pommard after taking over his in-laws’ estate in the early 20th century. His son Bernard later married a grower from Meursault in 1951, bringing both Meursault village vineyards and a parcel of Meursault Premier Cru Les Charmes into the domaine. The estate subsequently took the Virely-Rougeot name. Today the family continues to produce both red and white Burgundy from its holdings, including Bourgogne Blanc, Meursault, and Meursault Premier Cru Les Charmes alongside its Pommard and Beaune wines. The domaine describes its farming and winemaking as following traditional Burgundian methods.
- Vineyard: The domaine’s Meursault village holding covers 1.4 hectares and is particularly well situated. According to Virely-Rougeot, the wine is produced exclusively from parcels bordering the Meursault Premier Cru zone, specifically in the lieux-dits Les Narvaux and Limozin. The soils are clay-limestone with a predominance of white marl, a geological composition particularly associated with Chardonnay in this part of the Côte de Beaune. The vineyards are worked with spring plowing and the domaine describes its approach to vineyard protection as lutte raisonnée, or reasoned viticulture. Chardonnay is the sole grape variety, and the fruit is harvested entirely by hand. The location in Narvaux and Limozin is an important distinction for this bottling, giving it a much more specific vineyard origin than simply a generic blend of parcels scattered throughout the Meursault appellation.
- Winemaking: The Chardonnay is hand harvested and transported to the winery in harvest baskets. The fruit is processed before pressing and settling of the must. Alcoholic fermentation takes place in oak barrels, and the wine remains in barrel through the completion of malolactic fermentation. It is subsequently racked and fined with bentonite and casein before bottling. The domaine states that the wine is monitored throughout the vinification and élevage by an accredited laboratory and an oenologist. This barrel-fermented approach is used across Virely-Rougeot’s estate-grown white wines and provides the foundation for the fuller style traditionally associated with Meursault.

That combination is particularly appropriate for a barrel-fermented Meursault, pairing the Chardonnay’s depth with the earthy character of mushrooms while allowing its acidity to balance the richness of the dish.
