- Producer: Caraccioli Cellars was founded by Gary and Linda Caraccioli and is dedicated exclusively to traditional-method sparkling wine production in the Santa Lucia Highlands. The winery sources all fruit from its estate Escolle Vineyard and focuses on long lees aging and low-intervention production.
- Vineyard: The fruit is sourced entirely from the estate Escolle Vineyard in the Santa Lucia Highlands AVA of Monterey County. The vineyard is heavily influenced by cooling winds and fog from Monterey Bay, allowing Chardonnay and Pinot Noir to retain acidity while achieving full phenolic ripeness.
- Winemaking: Produced in the traditional Champagne method from 60% Chardonnay and 40% Pinot Noir. The wine undergoes primary fermentation in stainless steel, with a portion aged briefly in neutral French oak. No malolactic fermentation is performed due to naturally low pH levels. The 2019 spent approximately 57 months sur lie before disgorgement. Production was approximately 1,500 cases.
- Technical Details: Santa Lucia Highlands AVA, 60% Chardonnay / 40% Pinot Noir, 12% alcohol, traditional method sparkling wine, approximately 57 months on lees, estate-grown fruit from Escolle Vineyard. The Brut Cuvée is Caraccioli's flagship bottling.
- Food Pairing: Oysters, Dungeness crab, lobster, scallops, sushi, sashimi, fried chicken, triple-cream cheeses, and roasted poultry. The wine's high acidity and extended lees aging make it particularly effective with both seafood and richer dishes.
