- Producer: Champagne Michel Gonet traces its history to 1802, with the modern house established in Avize in the heart of the Côte des Blancs. Today the estate is managed by Frédéric Gonet and farms approximately 40 hectares of vineyards across Champagne, with significant holdings in Le Mesnil-sur-Oger, Avize, Oger, Vindey, Montgueux, and Fravaux. Chardonnay is the principal grape variety of the estate, particularly in its Grand Cru vineyards of the Côte des Blancs. Vineyard work emphasizes sustainable farming, hand harvesting, and parcel-by-parcel vinification. Michel Gonet produces several single-vineyard and village-designated Champagnes in addition to its non-vintage blends, with an emphasis on expressing the character of individual terroirs.
- Vineyard: This wine is sourced exclusively from the Les Hautes Mottes lieu-dit in Le Mesnil-sur-Oger Grand Cru. The vineyard sits on the renowned Campanian chalk soils of the Côte des Blancs and neighbors celebrated sites including Les Chétillons and La Croix Collard. The parcel is planted entirely to Chardonnay, with mature vines producing naturally concentrated fruit. Le Mesnil-sur-Oger is known for producing some of Champagne's most mineral and long-lived Blanc de Blancs, with the exposed chalk providing excellent drainage while retaining sufficient moisture during dry growing seasons. This bottling is produced solely from the 2015 harvest, highlighting the character of a single vineyard rather than a multi-parcel blend.
- Winemaking: Grapes are harvested by hand and fermented at low temperatures in stainless steel tanks. The wine undergoes full malolactic fermentation, softening the naturally high acidity of Le Mesnil Chardonnay while preserving freshness. Following bottling, it remained on its lees for a minimum of seven years before being disgorged in December 2022. The 2015 was released as a Brut Nature (Zero Dosage) with 0 g/L dosage, allowing the chalk-driven character of the vineyard to remain fully exposed. Extended lees aging contributes autolytic complexity while maintaining precision and tension.

- Food Pairing: The wine's combination of zero dosage, extended lees aging, and chalk-driven minerality makes it an excellent match for oysters, scallops, lobster, sashimi, grilled turbot, and Dover sole. Its concentrated Chardonnay fruit and autolytic complexity also pair well with roast chicken, veal in a light cream sauce, mushroom risotto, and aged Comté or Parmesan, where the wine's freshness balances richer textures while highlighting mineral precision.
