Notes:

(Savigny-lès-Beaune “aux Gravains”- Domaine Jean-Marc et Hugues Pavelot) The 2013 Pavelot aux Gravains had been assembled in tank, but not yet filtered, and it was showing very well at the time of my visit. The bouquet jumps from the glass in a black fruity and nicely reserved blend of dark berries, black cherries, woodsmoke, gamebirds, dark soil tones, coffee bean and a touch of cedar. On the palate the wine is pure, full-bodied and beautifully transparent, with a lovely core, fine-grained tannins and a long, tangy and very well-balanced finish. A beautiful wine in the making.  An initial hint of reduction immediately blows off to expose aromas that are composed of both red and dark currant along with plenty of earth, game, floral and exotic tea scents. There is a lovely sense of underlying tension to the beautifully delineated medium weight flavors that possess a slightly finer mouth feel thanks to the sophisticated tannins shaping the balanced and long if moderately austere finish. This too will definitely require several years of bottle age before it will be completely ready for prime time drinking. Burghound 91 Outstanding Top Value
