I’m pleased to offer today what may represent the finest set of wines ever produced at Domaine William Fèvre. I’ve followed these wines for as long as I’ve been in the wine business, and I can’t recall the superlatives Burghound has used to describe a release quite like this one: “breathtakingly good,” “stunningly good,” and “one to strongly consider.” Quantities were minuscule, but the resulting wines are simply not to be missed.


The long-time technical director and driving force behind the style at Domaine William Fèvre is Didier Séguier. At the helm since the late 1990s, he is widely credited with shaping the domaine’s modern identity, with a focus on purity, precision of terroir expression, organic and biodynamic practices, and a restrained, thoughtful use of oak that allows the sites to speak clearly.


I had the opportunity to visit with him a couple of years ago, and it was hard not to be impressed. Wines like Côte Bouguerots and Les Clos, in particular, deserve to be part of any conversation about the finest Chablis being produced today. I can’t stress enough how small the quantities were this year. From top to bottom, this is a truly stunning set of wines.

This is aromatically similar to the Petit Chablis though with more petrol influence. There is a bit more volume to the noticeably denser medium weight flavors that possess both an attractive texture and good power that carries over to the solidly long, complex and balanced bitter lemon-inflected finish. Good quality for its level and worth a look.

The nose instantly makes clear that this could come from nowhere else but Chablis with its cool and airy aromas of white flower, ocean breeze, algae and shellfish. The sleek and refined yet solidly powerful flavors possess a beguiling texture and excellent precision while displaying impressive length and an almost aggressive minerality on the clean, dry and balanced finale. This is lovely but note well that at least moderate patience will be required.

Cool, airy and beautifully layered aromas of white pepper, lemon zest, quinine and an array of floral wisps serve as an elegant introduction to the dense, overtly stony and vibrant middle weight flavors that possess first-rate cut and excellent length on the lightly bitter citrus-inflected finale. This is lovely and while it could use better depth, the balance is impeccable.

In much the same fashion as the Montmains, the nose makes clear that this could only be from Chablis with its nose of quinine, petrol, mineral reduction, tidal pool and oyster shell. There is outstanding volume, mid-palate density and power to the beautifully textured medium weight plus flavors that deliver excellent depth and persistence. This is arguably a bit less refined than it usually is but it's also notably more concentrated and powerful. One to strongly consider

This is also wonderfully elegant and expressive with its ripe yet cool nose of seemingly every flower imaginable as there is even a hint of gardenia, along with a plenitude of classic Chablis elements. The rich, suave and caressing medium-bodied flavors possess good verve and evident minerality on the youthfully austere and sneaky long finish. This is really very classy though it will definitely need to add depth to merit the upper end of my projected range.

This too instantly makes its origins clear with aromas of iodine, algae, ocean breeze and shrimp shell. As one might reasonably expect, there is markedly more size, weight and muscle to the broad-shouldered flavors that conclude in a compact, youthfully austere and highly persistent finale. This is a classic Bougros that is undeniably built-to-age and a wine that's going to need it.

Classic Chablis nuances of iodine, quinine, mineral reduction, oyster shell and lemon-lime add impressive breadth to the mostly white orchard fruit scents. Once again the palate impression of the super-sleek and intense large-scaled flavors is borderline thick while displaying superb power and drive on the youthfully austere and beautifully balanced finale. This is breathtakingly good.

A pure and glowing lemon yellow. The precision of the bouquet is impressive, with a slight marine reduction. Fine boned yet with backbone. There is significant energy behind, this has absolutely retained the style of the vineyard, less intense than some years but exceptionally fine. Drink from 2029-2035. Tasted Jul 2025.


- Jasper Morris, 92-94

 

Here the nose is restrained to the point of being almost mute with its airy and cool array of floral, spice, iodine, ocean breeze and similar oyster shell nuances. There is even better size, weight and richness to the even more evidently concentrated big-bodied flavors that possess a super-sleek and refined mouthfeel before concluding in a youthfully austere and balanced finish that just goes on and on. This is, quite simply, stunningly good.
