Article: 2020 Servin Chablis

Domaine Servin Vineyards

2020 Servin Chablis

While reviewing inventory, I was surprised to find a handful of 2020 Domaine Servin Chablis cases. For some reason, they had not been turned “on” for sale on the website.

It would have been rude to not sample one of the Montee de Tonnerre to report its progress to you. And frankly, oh my, the tasting is what has inspired this email.

Hints of lemon and lime on the nose along with a nuance of seashell and ocean breeze. It immediately tells you that you can be in no place other than Chablis. The mouth is classic Montee de Tonnerre, chiseled, mineral driven, with intensity and freshness all in a package that is oh-so-light-on-its-feet. The only thing this wine was missing for me, was a plate of oysters, but this can be my own personal tragedy. Take a bottle to your local Oyster stand and revel in the pairing. Absolutely stunning!

I agree when many of you tell me that the price of Chablis is starting to get away from us. But believe me when I tell you, at all price points, there is not a better White Burgundy out there. I guarantee it. Grab this one before it disappears. In Stock

A slightly more complex though less elegant nose reflects plenty of citrus elements on the combination of white and yellow orchard fruit, iodine and cool ocean breeze suggestions. The sleek, vibrant and well-delineation medium weight flavors possess both good minerality and salinity on the lengthy finish. This appealing effort is a mix of punch and refinement that should drink well young or with 5 to 7 years of cellaring.

Burghound, 91 Outstanding!

2020 Domaine Servin Chablis 1er Montee de Tonnerre

Here the expressive nose is at once much more floral but also more elegant with its airy aromas of cool citrus, quinine, tidal pool and oyster shell hints. There is a lovely sense of restraint to the palate etching middle weight flavors that are shaped by citrus-tinged acidity on the balanced, bone-dry and lingering finale. This classy effort is very MdT in style.

Burghound, 90-93 Outstanding!

Offering up aromas of orange oil, ripe lemon, crisp stone fruit, beeswax and smoke, Servin's 2020 Chablis 1er Cru Montée de Tonnerre is medium to full-bodied, satiny and enveloping, with racy acids, terrific depth at the core and a long, saline finish. It's the finest rendition of this cuvée since 2017.

2020 Domaine Servin Chablis Grand Cru Blanchots

As is often the case, the 2020 Chablis Grand Cru Blanchots is the most honeyed, sensual wine in the Servin portfolio, with wafting aromas of beeswax, acacia honey, white flowers and sweet stone fruit. Full-bodied, ample and satiny, it's broad, textural and enveloping, with a glossy attack and a bright, fleshy mid-palate, concluding with a saline finish. It's a particularly strong rendition of this cuvée and will have considerable gastronomic potential.
