Father Hervé, his wife Marie-Claire, and son Olivier farm mineral and stoney Sauvignon Blanc in Saint-Bris, salty and bracing Chardonnay in Côte d'Auxerre and the slopes of Chablis, and their dense, floral and haunting Pinot Noirs from old vines in Irancy and Auxerre.
