The latest edition to Giroux’s stunning line-up, this Mâcon-Fuissé “En Vers Chânes” comes from a 0.25-hectare planting in the highest-altitude parcel of the commune of Fuissé within striking distance to some of the newly minted premier cru designations in the Pouilly-Fuissé zone. “En Vers Chânes” is a remarkably steep site with soils of granite and clay-limestone and like all Giroux’s parcel, has been completely converted to organic viticulture. Broader and more profoundly mineral-driven than the Mâcon-Loché, it spends 12 months in used 500-liter barrels with no batonnage performed. Oliver produces only 160 cases per vintage and a small fraction of that made it to our cellar.
