(Savigny-lès-Beaune “la Dominode”- Domaine Jean-Marc et Hugues Pavelot) The 2013 la Dominode from Hugues Pavelot had also not yet been filtered, but it was not quite as happy about being sampled as the superb Gravains. The bouquet is pure and youthfully complex, delivering a fine constellation of black cherries, sweet dark berries, bitter chocolate, violets, gamebird, dark soil nuances, woodsmoke and vanillin oak. On the palate the wine is deep, full-bodied, young and chewy, with a fine core, lovely focus and grip, tangy acids and fine-grained tannins perking up the long and soil-driven finish.
