There is enough reduction to suppress the underlying fruit though there is good vibrancy and freshness to the saline and mineral-inflected middle weight flavors that terminate in a clean and dry but not really austere finish. This should be a lovely and altogether classic villages. Burghound 88-91
(done in 100% stainless steel; this was scheduled to be bottled the day after my visit): Pale, bright yellow. Mineral-driven aromas of ginger, white pepper, menthol and crushed stone. Brisk acidity (4.5 g/l) and a saline element give this densely packed village wine excellent inner-mouth tension. Finishes bright and gripping: this would make a great oyster wine. Vinous/Steve Tanzer 89-91
